รู้หรือไม่? อาหารที่แสดงฉลาก “Gluten Free” ต้องผ่านเกณฑ์มาตรฐานตามประกาศกระทรวงสาธารณสุข (ฉบับที่ 384) พ.ศ. 2560
สาระสำคัญ
ผลิตภัณฑ์ต้องไม่มีส่วนผสมของกลูเตนโดยธรรมชาติ หรือ หากมีการใช้วัตถุดิบที่มีกลูเตน ต้องผ่านกระบวนการกำจัดกลูเตน และมีปริมาณกลูเตนไม่เกิน 20 mg/kg ในผลิตภัณฑ์สุดท้าย ต้องระบุข้อความ “ไม่มีกลูเตน” หรือ “gluten free” เท่านั้น การตรวจวิเคราะห์กลูเตน
ต้องใช้วิธี Immunologic Method ที่มี sensitivity & specificity เทียบเท่า
ใช้แอนติบอดีที่จำเพาะกับโปรตีนที่ทำให้ผู้บริโภคแพ้กลูเตน
